New on this server and I figure I'll play a class uncommonly played to be able to gear up faster.

Hey and welcome, class distributions usually fluctuate within weeks. Play what you like to play, become good at it and get geared because people like to play with you

Short-term, you might consider tanking or healing, as 5-mans are usually short these roles.
That being said, there are a few classes for long-term raiding that are considered niche classes, such as Druids or Hunters. In a 40-man you'll rarely see more than 3-4 of these, so if you get yourself into a progressing guild, you'll get the majority of class-specific loot. But who needs these classes and when fluctuates, as Pucchini said.
If you want to get gear quickly, be good at your class, show up on-time to raids, and don't be a toxic asshole. All oh this matters much more than what your class is.

Strawie using herself as an example.
If you can learn to multibox, you can level 5 classes at once and fill multiple rolls on multiple toons, as well as have the added benefit of being able to gear your own toons in 5 mans. I think doing this added to my knowledge of knowing some more classes more intricately. It is some extra work initially, but it definitely pays off.

Warlocks are the least played class, at least for pvp.

PvE wise, it seems Alliance is short on hunters. Ranged & healers are more sought than melees/furies which are usually abundant, on top of that fact that 3 Alliance guilds are on KT at the moment (where you want low amount of melees & plenty of healers/ranged).
Horde side, I don't know what Beta is afer. Chaos is fine on all classes.
Overall, play what you enjoy the most, it's better for your motivation =)

Hello there,
I firmly believe it is always the best to just play the class you like the most.
If you enjoy any role then the question is what interests you the most? Whether it is PvP or PvE content or both. In the end, you can always make a few characters and just play a bit with each of them to see if that is what you want or not.

Just don't play a retri paladin. Every time a paladin specs retribution a puppy dies.
