My question is simple, is it worth starting on Vanillagaming as a new player ?
is the playerbase big enough for active pvp and raiding ?

Well, there's a lot of stuff to do once you hit 60.
Even tho the Player Base is not big, you will always find some Dungeon Groups.
There are several Raiding Guilds as well.If you start playing Alliance, you are very welcome in Everest. Helpful Players which help you out with Gear at the Start and get you ready to Raid.
PvP? Mh, mostly only 1 Warsong Gulch running, sometimes 2. Same goes for AB, you won't find that daily. AV? Not going on for Months.
Don't expect too much from VG. It has it's flaws here and there. Allthough it has a pretty friendly / familar playerbase and once you join a solid Raiding Guild, you will addept more into the Server.

To add to what Nope said, if you want to have fun while doing PVP, you'll need to raid, get pretty solid gear and then do pvp. Most of the PVPers are pretty good geared and if you enter WSG with blue items, you'll get smashed and have 0 fun.

Alliance has more raiding guilds,
Horde has more PVP dedicated players. So you can pick which side you want to go. But you can always find something to do once you get into a guild.

1. what do you expect?
2. alli has nice guilds (NA and EU - EU only two doing Aq/Naxx regularly -> dont rage much with those guys or u fucked). pop not high, but ppl are nice and helpful.
3. you can even multibox 5-20man runs using some third party software, which is challenging and as far as i know, this experience is not possible on some of the other servers.
4. u can vote and get flasks -> no tedious farming required to raid.
5. u can donate and get nice gear from dungeons, ZG, AQ20, MC easily in almost no time.
and 6. finally, get ready for a few idiots who need to break rules cause they wanna be the best in no time.

In regards to the OP's question: It surely is worth a try. Although we don't have AV regularly, WSG and AB is usually up. Although WSG more often than ab.

PVE wise you will have no issues at all, neither on Horde nor on Alliance.
